Funfetti Muffins

Do your kids BEG for the brightly colored FUNFETTI muffins every time you walk down the snack aisle in Costco? Mine do. And for the chocolate chip ones too (you can totally add ½ cup mini chocolate chips to this recipe and you’ll be the winningest mom out there).

So, what did I do? I went home and said, I can do this. And, don’t you know?!? I DID IT. And, I want to share it with you!

Ingredients

  • 3/4 cup WHOLE MILK GREEK YOGURT

  • 1/4 cup WHOLE MILK

  • 1 egg

  • 1/4 cup melted coconut oil

  • 2/3 cup sugar (I use organic cane sugar)

  • 1 tbs brown sugar

  • 1 tsp vanilla

  • 1 2/3 cup whole wheat flour

  • 2 tbs flaxseed

  • 1 tsp baking soda

  • 1/4 tsp salt

  • 1/3 cup SPRINKLES (more if desired)

Instructions

  • Preheat oven to 350 degrees.

  • In a large bowl, with a whisk, mix together yogurt, milk, egg, melted coconut oil, sugar, brown sugar and vanilla. Mix until combined. Add flour, flaxseed, baking soda, salt. Mix with a whisk until combined. Add sprinkles and gently fold in.

  • Line your muffin tins (mini or regular). Fill cups 1/2 - 2/3 full. Bake for 10-12 minutes for mini and 18-20 minutes for regular or until batter is set and muffins are lightly golden brown.
