Shrimp with Pepperoncini Garlic Butter (I promise it’s easier than it sounds!)

Need something quick, nourishing, and simply delicious that the WHOLE family will eat? TRY THIS! You can put all the ingredients on the table separately and let everyone make their own bowl is it meets their palate desires. LOTS of flavor options, lots of produce and lean protein! Which we love!

Ingredients

SHRIMP:

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp paprika

  • 1 tsp kosher salt

  • 1 lb shrimp

  • 2 tablespoons EVOO

Pepperoncini Butter Sauce

  • 6 tbs butter

  • 2 cloves garlic, minced

  • 1/4 c pepperoncini brine

  • 1/4 to 1/2c pepperoncinis, chopped

Cucumber salad

  • 1 cup cherry tomatoes, halved

  • half a cucumber, chopped

  • 3-4 cloves garlic, minced

  • salt and pepper

  • 1 tbs EVOO

  • 1-2 tbs red wine vinegar

Serving

  • Hummus

  • Spinach

  • Rice or Quinoa, cooked (Do this at the beginning)

Instructions

  1. Toss the cucumbers, tomatoes, and garlic in a bowl. Drizzle with the EVOO and 1 tbs of red wine vinegar add salt and pepper to taste. If desired add slightly more vinegar. Set aside

  2. Place all DRY ingredients (No oil and no shrimp) for the shrimp in a small bowl and mix together. Toss the dry rub together with the shrimp. Heat oil in a pan over medium heat and sear shrimp on both sides until pink.

  3. Melt butter in a small sauce pan over low heat. Stir in garlic, pepperoncinis and brine.

  4. Place everything on the table and let your crew make their own bowls! ENJOY!
